- If you plan to use a grill, prepare the coals before beginning recipe preparation. Start a large pot of water boiling which will eventually hold the ears of corn. Season the chicken breasts on both sides with salt and pepper. Set aside. Have ready a large bowl of ice water which will eventually hold the corn.
- Drop the corn into the boiling water and blanch till crisp-tender when pierced with a knife, about 2 min.
- Drain the corn and immediately plunge the ears into the ice water. Drain and set aside. Mince the basil. Dice the tomatoes (or possibly cut the cherry tomatoes in half) and dice the mozzarella; the pcs should be slightly larger than the corn kernels. Begin grilling the chicken breasts (or possibly place on a seasoned grill pan over high heat); cook about 5 min per side, till the chicken is no longer pink in the middle. While the chicken cooks, cut the corn kernels off the cobs and transfer to a large bowl.
- Add in the tomatoes, basil and mozzarella to the bowl with the corn kernels.
- Add in the extra virgin olive oil to the salad, then season with salt and pepper. Toss lightly and taste.
- Add in a drizzle of lemon juice or possibly vinegar if the salad needs a little boost of flavor. Slice the grilled chicken breasts into strips.
- Using a slotted spoon, portion the salad onto plates and arrange chicken strips on top.
- Serves 4.
