- Preheat the grill to a moderate heat.
- Place aubergine slices on a grill pan and lightly brush with 1-2 Tbsp. of the oil. Cook for 2-3 min on each side or possibly till golden and soft. Allow to cold.
- In a bowl, combine the cubed cheese with the lemon zest and juice and some of the flat leaf parsley and basil.
- Place a piece of cheese onto an aubergine slice. Roll up and secure with a cocktail stick. Repeat this process till all the ingredients are used.
- Place rolls into a serving bowl, drizzle over the remaining oil and sprinkle with remaining herbs and season.
- NOTES : Bite size pcs of goats cheese wrapped in grilled aubergine.Lovely to serve with drinks.
