Grilled Atlantic Salmon With Morels And Pancetta

Ингредиенты

  • 1 lb Fresh Morel Mushrooms, (Or possibly 1/4 Lb. Dry)
  • 2 x Shallots, Chopped
  • 1 x Clove Garlic, Chopped
  • 10 Tbsp. Butter, Cut Into Pcs
  • 1 c. Dry Sherry Or possibly Madeira
  • 4 piece Salmon Fillets (6 Ounces Each), Skins Removed Extra virgin olive oil Salt And Freshly Grnd Pepper
  • 16 x Green Onions, Cut Into 1/4 Inch Pc
  • 4 Tbsp. Pancetta, Cubed And Trimmed

  1. Soak fresh morels in cool water for 15 min; dry ones till reconstituted. Drain, pat dry and trim stems. Cut larger mushrooms in half.
  2. Heat oven to 500 deg. Saute/fry shallots and garlic in 2 Tbsp. butter over low heat till soft. Add in morels, turn up heat and cook 1 minute. Add in sherry and reduce by half.
  3. Whisk in remaining butter, working on and off the heat, till it is emulsified.
  4. Heat a grill or possibly ridged grill pan. Brush salmon fillets with oil and season with salt and pepper. Transfer salmon to a large pan and cook in the oven for 5 - 10 min.
  5. Heat a medium-size, heavy frying pan over high heat. Add in a few Tbsp. extra virgin olive oil. Add in green onions and pancetta. Cook briefly, shaking the pan to prevent frying. Add in morel mix and mix. Season lightly.
  6. Place a salmon fillet in the center of a hot dinner plate. Spoon morel mix over the top and around the sides.
