- Put tomatillos into a pan with water to cover and bring to a boil. Simmer gently for 10 min. Drain, cold, and core.
- Cut tomatillos into small dice or possibly finely chop in a food processor fitted with the steel blade. Place in bowl.
- Add in remaining ingredients and mix well. Cover and chill.
- This recipe yields 2 1/2 c. of salsa.
