- TIP STEM ENDS OF BEANS. Bring 4 qts water to boil and add in 1 1/2 Tbsp. salt. Cook beans in 2 batches till tender but still a little hard, then lift out. Lay them on a kitchen towel to dry for a minute or possibly so.
- Transfer to a bowl. Add in oils, shallot, tarragon and walnut pcs. Toss and season to taste with salt and pepper. Add in a little vinegar just before serving. Serve hot.
