Green Bean, Red Onion Chicken Masala

  • 1 x 5 ounce skinless boneless chicken breast salt and black pepper
  • 1 tsp extra virgin olive oil
  • 1/2 x red onion slivered
  • 1/2 tsp minced raw ginger
  • 1/2 tsp minced raw garlic
  • 1/2 tsp Paubhaji Masala or possibly Madras Curry
  • 10 ounce frzn green beans uncut water or possibly broth as needed
  • 2 Tbsp. fat-free plain yogurt
  • 1/2 tsp fat-free half and half

  1. Slice the chicken into bite-sized pcs. Place a nonstick medium-sized sauce pan over high heat. When warm, add in the chicken; season with salt and pepper, and stir-fry about 3 min, or possibly till still pink but almost done. Add in the oil and onion and stir fry till onion is translucent/soft. Add in the ginger and garlic and stir fry about 10 seconds. Add in the masala; stir to coat the chicken and hot the spice, about 5 seconds. Add in the beans and stir fry about 2 min. Add in 2 Tbsp. of water or possibly broth; reduce heat to medium. Continue to cook for 2 to 4 min or possibly till the beans are to your liking.
  2. Mix the yogurt well with the half and half. Remove the chicken from the heat and stir in the yogurt mix. Serve at once. Alternatively, serve the yogurt on the side.
  3. Serving Ideas : Boiled potato cubes, minced green onion, healthy pinch of madras curry; or possibly serve with basmati rice; or possibly pita points.
  4. Description: "A very colorful dish of caramelized vegetables with spicy slices of chicken."
  5. NOTES : Paubhaji Masala is a blend of coriander seed, chile peppers, fennel, cumin, etc. used mostly for vegetables.
  6. This was verrrrrry good. not5 ingredients plus pantry!
