%20and%20always%20seasoned%20with%20goma%20(sesame).%3C/p%3E%3Cp%3EIt%E2%80%99s%20such%20a%20simple%20recipe,%20I%20have%20a%20feeling%20this%20is%20going%20to%20be%20a%20short%20blog%20post%E2%80%A6%3C/p%3E%3Cp%3EI%20like%20using%20black%20sesame%20with%20green%20beans%20(and%20slicing%20them%20lengthwise)%20for%20the%20visual%20contrast,%20but%20toasted%20white%20sesame%20seeds%20work%20too.%20I%E2%80%99m%20just%20partial%20to%20all%20things%20black%20sesame%20(as%20my%20black%20sesame%20ice%20cream%20obsession,%20and%20black%20sesame%20mochi%20cake%20recipe%20will%20attest).%3C/p%3E%3Cp%3ENutty,%20rich%20black%20sesame%20pairs%20especially%20well%20with%20sugary%20desserts,%20but%20here%20it%20gets%20used%20in%20a%20side%20dish%20that%E2%80%99s%20more%20savory%20than%20sweet.%3C/p%3E%3Cp%3EThe%20sesame%20seeds%20are%20ground%20up%20together%20with%20a%20little%20sugar,%20a%20little%20soy%20sauce,%20and%20a%20pinch%20of%20salt%20(and%20sometimes%20miso%20paste),%20then%20the%20whole%20thing%20is%20slathered%20over%20blanched,%20drained%20green%20beans%20(or%20spinach).%3C/p%3E%3Cp%3EA%20while%20back,%20probably%20in%20the%20pre-blog%20days,%20I%20tried%20making%20spinach%20goma-ae%20for%20Paula%20with%20white%20sesame,%20but%20she%20couldn%E2%80%99t%20get%20over%20the%20taste%20of%20a%20slightly%20sugary%20dressing%20on%20spinach,%20and%20she%20especially%20couldn%E2%80%99t%20get%20into%20anything%20that%20involved%20cold%20cooked%20spinach.%20I%20guess%20many%20people%20might%20be%20with%20her%20on%20that%20one%E2%80%A6%3C/p%3E%3Cp%3EBlanched%20green%20beans%20are%20another%20story%20%E2%80%94%20they%20are%20crisp,%20green,%20and%20fresh%20tasting%20even%20after%20a%20few%20minutes%20of%20boiling,%20and%20they%20hold%20up%20well%20to%20the%20sesame/sugar/soy%20sauce%20combination,%20since%20they%20have%20a%20little%20natural%20sweetness%20themselves.%3C/p%3E%3Cp%3EThis%20side%20dish%20is%20the%20perfect%20green%20accompaniment%20to%20a%20meat-%20or%20grain-centered%20meal.%20The%20sesame%20seasoning%20is%20one%20of%20my%20favorite%20ways%20to%20dress%20up%20green%20vegetables%20with%20flavors%20that%20transport%20me%20back%20to%20Japan.%3C/p%3E%3Cp%3Ep.s.%20As%20I%E2%80%99ve%20fallen%20more%20and%20more%20behind%20on%20replying%20to%20blog%20comments%20(sorry!),%20I%E2%80%99ve%20come%20to%20an%20important%20realization:%20as%20a%20grad%20student,%20I%20procrastinated%20on%20my%20research%20by%20working%20on%20this%20blog.%20Now%20that%20I%E2%80%99m%20not%20a%20student%20anymore,%20I%20must%20not%20be%20quite%20as%20desperate%20for%20procrastinatory%20activities!%20I%E2%80%99ve%20been%20spending%20less%20time%20on%20Spontaneous%20Tomato,%20and%20more%20time%20on%20summer%20teaching,%20new-used-car-buying%20(and%20soon%20used-car-selling),%20and%20wedding%20planning!%20That%20might%20just%20be%20how%20things%20are%20this%20summer,%20until%20I%20get%20married%20(in%20Sept.),%20find%20a%20job%20(?!?),%20and%20settle%20into%20a%20new%20routine.%3C/p%3E%3Cp%3EDon%E2%80%99t%20worry,%20though;%20I%E2%80%99m%20still%20finding%20time%20for%20plenty%20of%20cooking%20and%20eating.%3C/p%3E%3Cp%3ERECIPE:%3C/p%3E%3Cp%3EGreen%20Bean%20Black%20Sesame%20Goma-Ae%3C/p%3E%3Cp%3E(Makes%202-3%20cups;%20serves%206-8%20as%20a%20side%20dish.)%3C/p%3E%3Cp%3EActive%20and%20total%20time:%2030%20minutes.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EHow%20to%20make%20it:%3C/p%3E%3Cp%3E1.%20Optionally%20halve%20the%20green%20beans%20lengthwise%20using%20a%20sharp%20paring%20knife%20(it%20takes%20a%20while%20to%20do%20this,%20though).%20Chop%20the%20green%20beans%20crosswise%20into%20short%20lengths%20(1%C2%BD%20%E2%80%93%202%20inches%20long).%3C/p%3E%3Cp%3E2.%20Prepare%20a%20large%20bowl%20of%20ice%20water%20and%20put%20a%20colander%20in%20the%20sink.%20Bring%20a%20large%20pot%20of%20water%20to%20a%20boil,%20then%20blanch%20the%20chopped%20green%20beans:%20boil%20lengthwise-halved%20green%20beans%20for%20about%203%20minutes,%20or%20boil%20whole%20green%20beans%20for%20about%204%20minutes.%20(Taste-test%20one%20for%20doneness%20before%20draining%20them.)%20Drain%20the%20green%20beans%20in%20the%20colander,%20then%20plunge%20them%20into%20the%20ice%20water%20to%20stop%20them%20from%20cooking.%20Drain%20again,%20gently%20pat%20dry,%20and%20transfer%20to%20a%20bowl.%3C/p%3E%3Cp%3E3.%20Using%20a%20mortar%20and%20pestle%20(the%20ridged%20Japanese%20suribachi%20type%20works%20especially%20well),%20grind%20the%20sesame%20seeds%20well.%20(You%20may%20need%20to%20do%20this%20in%20batches.)%20Add%20the%20sugar%20and%20salt,%20and%20grind%20those%20into%20the%20sesame%20seeds.%20Then%20add%20the%20soy%20sauce%20(and%20the%20mirin,%20if%20using)%20and%20continue%20grinding:%20it%20should%20come%20together%20into%20a%20paste.%20Taste%20and%20adjust%20seasoning%20as%20desired.%3C/p%3E%3Cp%3E4.%20Use%20your%20hands%20to%20gently%20distribute%20the%20sesame%20paste%20over%20the%20blanched,%20dried%20green%20beans.%20Transfer%20to%20a%20smaller%20serving%20
