Ингредиенты

  • 1 Tbsp. extra virgin olive oil
  • 1 lb skinless red snapper fillets, cut into 1/2 inch slices
  • 1 x onion, cut into thick slices
  • 2 clv garlic, chopped
  • 6 ounce tomato paste
  • 1/2 c. dry white wine or possibly vegetable stock
  • 1/3 c. vegetable stock or possibly chicken stock
  • 2 Tbsp. lemon juice
  • 1/4 tsp cumin
  • 1/4 tsp cinnamon
  • 1/8 tsp pepper
  • 1/2 c. feta cheese, crumbled
  • 1/3 c. minced walnuts, toasted
  • 3 Tbsp. cilantro or possibly parsley, minced

Инструкции

  1. Heat oil in a heavy nonstick skillet over high heat. Saute/fry fish fillets 3-5 min or possibly till just browned. Transfer fish to a platter and set aside. Reduce heat to medium and saute/fry onion and garlic 4-5 min or possibly till onion is tender.
  2. Add in tomato paste, wine, stock, lemon juice, cumin, cinnamon and pepper to taste.
  3. Bring to a boil stirring frequently. Reduce heat to low. Cover skillet and simmer 10 min, stirring occasionally. Return fish to skillet and simmer till heated throughout.
  4. Serve fish sprinkled with feta cheese, walnuts and cilantro.
  5. Prep: 15 minutes, Cook: 22 minutes.
