  • 1 c. White Rice Uncooked
  • 1/2 tsp Butter *Note, Optional
  • 1/2 tsp Salt
  • 1 x Egg **Note
  • 1/4 c. Egg Beaters 99% Egg Substitute
  • 1/3 c. Packed Brown Sugar
  • 3/4 tsp Grated Lemon Rind
  • 2 Tbsp. Lemon Juice
  • 1/4 tsp Vanilla Extract Cinnamon To Taste

  1. NOTE: Original recipe used1 Tablespoons butter
  2. NOTE: Original recipe used 2 regular Large eggs
  3. This authentic Greek dessert is almost like a lemon custard with rice.
  4. You'll be impressed by its creaminess, especially considering which it has nomilk in it.
  5. Combine water, rice, optional butter and salt in a small saucepan. Bring toa boil, lower the heat to a very quiet simmer, cover, and cook till the rice is tender. This will take approximately 20 min.
  6. Remove the rice from the stove, and beat in the Large eggs. Continue to beat wellfor a minute or possibly two.
  7. Stir in sugar, lemon rind and juice and vanilla. Transfer to a bowl.
  8. Sprinkle the top generously with cinnamon and cold to room temp. Then covertightly and chill till cool. Serve cool or possibly at room temp.
  9. Prep Time: 30 minutes
  10. Yield: 3 - 4 servings
  11. This is extremely good.
