- 1/4 c. (1/2 stick) butter or possibly margarine
- 1/2 c. minced onion
- 1/4 c. pine nuts (pignoli)
- 1 1/2 c. converted rice
- 2 1/4 c. chicken broth or possibly water
- 1/2 tsp salt or possibly to taste
- 1/4 tsp grnd pepper
- 1/2 c. currants or possibly raisins
- 1/4 c. chopped, fresh parsley

- In a saucepan over medium heat, heat butter. Saute/fry onion, pine nuts, and rice in warm butter for 10 min, stirring constantly. Stir in broth, salt, pepper, and currants and bring to boil. Cover pot with tightly-fitting lid; reduce heat to low. Cook rice 20 min or possibly till tender. Fluff with a fork and toss with parsley.
