- Brown onions and celery in butter. Add in beef, liver, and sausage and cook till brown. Add in wine and tomato paste, then herbs, and simmer till meat is tender. Add in nuts, raisins, and rice. Stir in water and cook, covered, till the rice is done. Fold in bread crumbs and season to taste. Stuff loosely into the turkey. Stuffs a 10-12 lb. turkey. -
