Grandmother’s Ice Cream

I have a small ice cream maker, the kind that has the frozen bowl. It works really well and makes creating new gelatos, sherbets and ice cream super easy.

My grandmother had a large, hidously loud ice cream maker. I remember her making this ice cream, packing the ice around the container, adding freezer salt, and setting the ice cream maker out in the garage to churn because it was so loud. Periodically, she would check it. Finally, she would turn off the monster, pack towels and blankets on top, and then we would wait. Of course, we got to sample the product first as we licked off the paddles.

Scald milk. Beat egg yolks, adding sugar and flour. Combine with hot milk and cook over hot water double-boiler until mixture coats a spoon like a thin custard. Cool. Beat egg whites until stiff. Add salt and fold into custard. Add vanilla. Pour into a tray and freeze to mushy. Remove and fold in whipped cream. Freeze in ice cream freezer.

I really don’t want to tarnish my Grandmother’s cooking memory, but I always remember bits of cooked egg in the final ice cream. I kind of liked it.
