- Mix cocoa, sugar, flour and salt together in the top of a double boiler; set aside. Beat egg yolks; reserve whites and set aside.
- In a separate pan, heat lowfat milk over low heat. Pour warmed lowfat milk over cocoa mix; stir to blend. Cook lowfat milk/cocoa mix in the top of double boiler, stirring constantly, till mix begins to thicken. Remove a small amount (about 1/4-1/2 c.) of chocolate mix. Stir into beaten egg yolks. Add in egg yolk mix to chocolate mix in the top of double boiler. Cook till thick, stirring frequently. Add in butter and cook 1 minute longer. Remove from heat. Cold slightly. In a separate bowl, beat egg whites till light but not stiff. Mix in chocolate mix. Spread into prepared pie shell. Bake 15 min at 325 degrees. Cold pie on rack. Refrigeratewell before serving.
