This is a chocolate cake I remember from my childhood, our neighbor used to make it and she would give me a piece of it with a big tall glass of milk. I found the recipe in my old recipe file and ran into the kitchen to make it right away. This is I’m sure the “box cake” of my grandmother’s day. It is so good, moist with a wonderful texture and the frosting is divine, love the chocolate with the walnuts. Her recipe called for a teaspoon of cinnamon but I omitted that. Add it if you desire.

Be sure to note the temperature of the oven change if you are baking in a glass pan. It almost always should be 25 degrees less that the stated temperature time. I always turn my oven down when baking in glass dishes no matter what it is. It is something my mom taught me and I never questioned why, I just do it.

Grandma's Chocolate Cake

Yield: 9 x 13 cake - serve 8 -10

Cook Time: 30 minutes

Total Time: Less than 1 hour

The cake childhood memories are made of, moist chocolate cake with chocolate walnut fudge frosting. Be sure to grab a glass of milk!

Ingredients:

In a saucepan melt the butter with the water. Stir in the cocoa and oil. Cool for 15 minutes.

Preheat oven to 350 degrees. (325 for a glass pan) Spray a 9 x 13 pan with cooking spray. Set aside.

Sift together flour, sugar, baking soda, cinnamon and salt. Set aside.

Add the eggs and buttermilk to a mixing bowl big enough for everything. Whisk until the eggs and buttermilk are combined. Add the cocoa mixture. Whisk together for several minutes.

Add half of the dry ingredients, mix in. Add remaining ingredients and whisk together a few minutes until everything is incorporated. Pour batter into prepared pan.

Bake for about 30 minutes or until a tester comes out clean. When you take the cake out of the oven start the frosting.

Chocolate Fudge Frosting

Add the butter, cocoa and milk to a saucepan. Bring to a boil and boil for 1 minute. Let cool about 10 minutes and stir in powdered sugar. Beat until frosting is smooth. Stir in nuts and frost cake while still warm.
