  • 1 1/4 c. Flour
  • 1 3/4 tsp Baking pwdr
  • 3/4 tsp Salt
  • 3/4 c. Sugar
  • 1/3 c. Shortening
  • 1 x Egg, unbeaten
  • 1/2 c. Lowfat milk
  • 1 tsp Vanilla
  • 1/4 c. Brown sugar
  • 2 Tbsp. Butter, melted
  • 1/4 c. Each of minced apple and peach

  1. Sift together the flour, baking pwdr, salt, and sugar. Now add in the shortening, egg, lowfat milk, and vanilla. Beat for 3 min with mixer.
  2. Cover bottom of a well greased 8x8x2-inch square pan with 1/4 c. brown sugar and 2 tbsp melted butter.
  3. Arrange the fruit over the bottom of pan and pour batter over fruit. Bake at 350F for 35-40 min. Serve hot or possibly cold.
