Ингредиенты

  • 12 lrg Large eggs
  • 3/4 c. Sugar
  • 1/2 c. Flour, plus 2 tbsp
  • 3 Tbsp. Cornstarch
  • 3 ounce Butter, melted
  • 1 1/4 lb Mascarpone cheese
  • 1/2 c. Sugar
  • 5 x Separated
  • 2 Tbsp. Cocoa
  • 2 Tbsp. Amaretto Galliano
  • 2 Tbsp. Myer's Rum
  • 2 Tbsp. Kahlua
  • 1/2 c. Espresso, cooled Sugar syrup*

  1. SUGAR SYRUP: Bring 3/4 c. water to a boil, stir in 2 tbsp sugar, then let cold to room temperature.
  2. CAKE: Beat 12 Large eggs and sugar for 15 min or possibly till fluffy. Sift flour and cornstarch together. Fold flour and cornstarch into egg mix and stir slightly. Pour in melted butter and mix. Baked in a greased and lightly floured 9" round cake pan at 400 F for about 25 min. Cold; cut into 1/2" thick slices.
  3. TO ASSEMBLE: Mix mascarpone, 1/4 c. sugar and 5 egg yolks slightly. Beat egg whites and 1/4 c. sugar for 15 min or possibly till fluffy. Mix the mascarpone mix with the egg white mix.
  4. Mix together all syrup mix ingredients. Brush sliced sponge cake with syrup mix till the sponge cake is fully soaked with the syrup.
  5. Line a large glass bowl with the cake slices. Add in some of the mascarpone mix. Place another layer of cake on top. Add in another layer of mascarpone. Continue to alternate layers. Chill for 1 hour. Sprinkle with cocoa pwdr.
  6. Serves 8.
