  • 4 sm hard ripe pears
  • 1 x lemon, cut in half
  • 2 ounce imported Gorgonzola (or possibly other high quality Blue cheese)
  • 2 Tbsp. soft unsalted butter
  • 2 Tbsp. crushed walnuts, pistachio, or possibly pine nuts

  1. Method:Carefully peel pears, leaving stems attached. Cut in half lengthwise and scoop out seeds, along with a scant Tbsp. of pulp out of each half. Rub with lemon juice to prevent discoloration. Cream Gorgonzola and butter together in a small bowl till soft and fluffy. Fill hollows of pear halves with cheese mix and carefully stick the two halves back together. Roll pears in crushed nuts and refrigeratefor 2 hrs, till cheese is hard.
