%3C/p%3E%3Cp%3EThese%20are%20best%20eaten%20freshly%20cooked%20but%20I%20won%E2%80%99t%20deny%20the%20scraps%20were%20eaten%20cold,%20much%20later%20on%20with%20glee%20still%20in%20my%20heart!%20For%20our%20main%20course%20I%20adapted%20an%20Ainsley%20Harriott%20recipe%20for%20Sinhalese%20Prawns%20(think%20Nepalese%20style%20of%20cooking?)%20but%20using%20freefrom%20spaghetti.%20If%20I%20was%20making%20this%20again%20(which%20I%20probably%20will!),%20I%20would%20go%20easy%20on%20the%20lemon%20juice%20as%20it%20was%20a%20little%20overpowering,%20maybe%20just%20try%20half%20and%20add%20more%20to%20taste.%20The%20Freefrom%20pasta%20did%20break%20up%20a%20little%20but%20not%20in%20a%20bad%20way.%20It%20did%20have%20a%20slight%20powdery%20taste%20but%20overall%20the%20dish%20was%20still%20enjoyable%20and%20a%20good%20substitute%20for%20ordinary%20spaghetti.%3C/p%3E%3Cp%3EFinally%20for%20pudding,%20I%20made%20individual%20hot%20cross%20bread%20and%20butter%20pudding%20which%20were%20quite%20tasty%20considering%20they%20were%20gluten,%20wheat%20and%20dairy%20free!%20Recipes%20for%20both%20will%20follow%20in%20my%20next%20posts.%3C/p%3E%3Cp%3EThank%20you%20to%20ever%20patient%20friend%20Matt%20who%20opened%20the%20windows%20when%20the%20oil%20started%20foaming%20over%20the%20saucepan%20%E2%80%93%20note%20to%20use%20a%20large%20pan%20%E2%80%93%20switching%20pans%20mid%20frying%20is%20very%20unadvisable!%20Oh%20and%20of%20course%20for%20guinea%20pigging%20it%20all%20and%20saying%20nice%20things%20about%20the%20food!%3C/p%3E%3Cp%3EAubergine%20Bhajis%3C/p%3E%3Cp%3EMakes%20about%2010%3C/p%3E%3Cp%3EFirstly,%20dice%20the%20aubergine%20into%201cm%20cubes,%20place%20in%20a%20large%20sieve,%20sprinkle%20over%20the%20table%20salt%20and%20leave%20for%20at%20least%2015%20minutes,%20this%20will%20help%20draw%20out%20some%20of%20the%20juices.%20Rinse%20well%20in%20water%20and%20dry%20in%20a%20clean%20cloth.%3C/p%3E%3Cp%3EIn%20a%20bowl,%20mix%20the%20flours%20and%20seasonings,%20slowly%20add%20the%20water,%20until%20you%20have%20a%20nice%20smooth%20batter.%20Add%20the%20onion%20and%20drained%20aubergine,%20coat%20well.%3C/p%3E%3Cp%3EHeat%20the%20oil,%20drop%20a%20little%20batter%20in%20to%20test%20%E2%80%93%20it%20should%20colour%20nicely%20within%20a%20minute%20and%20float%20to%20the%20top,%20needs%20to%20be%20hot!%3C/p%3E%3Cp%3ECarefully%20spoon%20in%20the%20batter,%20in%20batches,%20leaving%20plenty%20of%20space%20and%20fry%20each%20fritter%20for%20a%20couple%20of%20minutes%20or%20until%20nicely%20browned,%20turning%20over%20if%20necessary%20and%20then%20place%20on%20lots%20of%20kitchen%20paper%20to%20drain.%3C/p%3E%3Cp%3EServe%20with%20the%20dip.%20Oh%20and%20try%20to%20resist%20eating%20them%20all.%3C/p%3E%3Cp%3EChilli%20mint%20dip%3C/p%3E%3Cp%3EMakes%201%20serving%20%E2%80%93%20multiply%20as%20needed%3C/p%3E%3Cp%3E1%20red%20chilli%3C/p%3E%3Cp%3E2%20cloves%20garlic%3C/p%3E%3Cp%3E2%20tbsp%20caster%20sugar%3C/p%3E%3Cp%3E2%20tbsp%20rice%20wine%20vinegar%3C/p%3E%3Cp%3E2%20tbsp%20water%3C/p%3E%3Cp%3E1%20tbsp%20finely%20chopped%20mint%20leaves%3C/p%3E%3Cp%3EHeat%20everything%20together%20in%20a%20small%20pan%20and%20boil%20for%20about%2010%20minutes%20or%20until%20lightly%20thickened,%20allow%20to%20cool%20and%20serve%20with%20the%20fritters.%3C/p%3E){kind=link}
