- In a medium saucepan, mix the brown sugar, dark Karo syrup, 1/4 c. fat-free lowfat sour cream & salt. Stir over low heat till the sugar is completely dissolved. Turn the heat up to medium. When the syrup starts to boil, remove from heat. Let cold 4 min. Add in the other 1/4 c. of fat-free lowfat sour cream. Stir till blended. This sauce is thin sufficient to be poured when it's cold.
- For a thicker sauce add in i Tbsp. cornstarch at the beginning. Good for making caramel apples.
- For Caramel Candy:Boil syrup mix till a drop of the syrup forms a cool, soft ball when dripped in cool water. Fold in the second 1/4 c. fat-free lowfat sour cream.
- While it's cooling for a few min, spray a few plastic ice cube trays with vegetable oil cooking spray. You want the caramel to cold sufficient so it will not heat the plastic ice cube trays, but do not let it cold to the point it starts to stiffen. Pour into ice cube trays & chill. When the caramels are completely cold, wrap each in wax paper.
