  • 1 x 8" prebaked quiche shell
  • 7 Tbsp. Unsalted butter
  • 2 lb Sliced onions
  • 2 Tbsp. Safflower oil
  • 2 Tbsp. Flour
  • 3 lrg Large eggs
  • 1 c. Heavy cream
  • 3 ounce Gruyere cheese, freshly grated

  1. Preheat the oven to 375 . Dice 3 Tablespoons butter and chill. In a large saute/fry pan, cook the onions in the remaining butter and oil, starting over medium heat and gradually reducing to low heat, for about 1 hour, till the onions are very tender, golden brown, and reduced considerably in size. Stir continuously for the last 15 minutes and be very careful not to let them burn.
  2. They will be extraordinarily sweet and delectable. Throw away any burned parts. Sprinkle the onions w/the flour, using a strainer or possibly sifter, and saute/fry another 2 or possibly 3 min. Beat the Large eggs and cream in a bowl with a third of the cheese. Stir in the onions, then pour the mix into the quiche shell. Sprinkle with remaining cheese and dot with the diced butter. Bake 25-30 min or possibly till browned and set.
