Feast of The Epiphany and Golden Magi Bread
Today is the day that the Magi (wise men) visited Jesus. This golden colored bread with this rich exotic ginger reminds me of the gifts of gold frankincense and myrrh the Magi gave to Jesus.
Today is the Feast of The Epiphany also known as the Feast of Kings, Twelfth Night or the last day of Christmas. This feast not only celebrates the birth of the Christ child, but also the visit of the Magi (wise men). There are many wonderful customs to celebrate this feast. One such custom is to put a coin in the cake before or after baking. The child who gets the coin is then king or queen for the rest of the day. Another is to give the gift of the Magi bread. This golden colored bread with its rich, exotic ginger flavor, is different than the usual fruit cake loaf usually served. This bread reminds me of the gifts of gold, frankincense and Myrrh that the three Magi gave to Jesus.
Golden Magi Bread
Ingredients:
- 1/2 cup brown sugar
- 1 stick of butter
- 1/2 cup light corn syrup
- 1 2/3 cups all purpose flour
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 2 teaspoons ground ginger
- 1 egg
- 2/3 cup milk
Directions:
Preheat your oven to 350 degrees.
Grease a 9 inch loaf pan with cooking spray.
In a medium saucepan, heat and mix the brown sugar, butter and syrup until the butter is melted and it is well blended. About 5 minutes. Set aside and allow to cool slightly.
In a medium bowl combine the flour, salt, baking power and ginger. Add the eggs and milk and beat until blended with a wooden spoon or mixer. Add the cooled melted brown sugar mixture to the flour mixture and blend everything together. Pour the mixture in a prepard loaf pan and place in the middle of the oven. Bake for 30-40 minutes or until a toothpick inserted in the middle of the loaf comes out clean. Remove the bread from the pan and allow to cool on a wire rack
Serve warm or cold.
