- Preheat oven to 425 degrees. Coat baking sheet with nonstick cooking spray.
- In medium bowl, combine flour, sugar and salt. Using fork, slowly stir oil into flour mix till crumbly. Stir in sufficient ice water so dough will hold together. Turn dough out onto work surface and flatten into disk.
- Roll dough between sheets of wax paper into a circle, 14 to 15 inches in diameter and approximately 1/16-inch thick, patching where necessary. Remove top sheet and invert dough onto prepared baking sheet. Cover and chill while preparing filling.
- In large, heavy saucepan, heat butter over medium heat. Add in sugar and stir till mix turns deep gold, about 8 min. Scrape in seeds from vanilla bean; add in bean and orange peel. Stir 1 minute. Add in apples. Reduce heat to medium-low; cook till mix is thick, golden brown and reduced to 2 1/4 c., stirring often, about 40 min. Stir in honey. Remove from heat and cold to room temperature. Throw away vanilla bean.
- Spread apple mix over pastry, leaving 1 1/2-inch border around edge. Fold pastry border over apples. Bake 15 min. Reduce oven temperature to 375 degrees and bake till crust is golden brown and juices are bubbling, 30 to 40 min.
- Using long spatula, loosen tart from baking sheet and slide onto serving platter. Let cold slightly before serving. Garnish with slivered almonds and curled lemon peel if you like.
- This recipe yields 8 servings.
- Comments: The pastry crust can be made up to one week ahead. Cover it tightly and chill. The delicious apple filling can be made up to one day ahead and refrigerated in an airtight container.
