%20boxed%20pasta,%20I%20could%20do%20it%20myself,%20thank%20you%20very%20much.%20However,%20on%20the%20rare%20occasions%20that%20I%20find%20myself%20at%20an%20Italian%20restaurant,%20I%20opt%20for%20either%20spaghetti%20carbonara%20or%20pasta%20with%20vodka%20sauce.%20Carbonara%20I%E2%80%99ve%20made%20plenty,%20but%20vodka%20sauce%20always%20seemed%20to%20exotic%20and%20difficult.%20It%20only%20recently%20occurred%20to%20me%20the%20vodka%20sauce%20is%20literally%20vodka,%20cream%20and%20tomato%20sauce.%20Who%20knew?%3C/p%3E%3Cp%3EI%20scanned%20the%20recipe%20for%20every%20recipe%20I%20could%20find.%20There%E2%80%99s%20no%20way%20my%20favorite%20sauce%20could%20be%20so%20ridiculously%20simple.%20My%20entire%20life%20I%E2%80%99ve%20paid%20for%20overpriced%20pasta%20thinking%20I%20was%20at%20the%20mercy%20of%20the%20restaurant.%20That%20was%20all%20about%20to%20change.%20Literally,%20tomato%20sauce%20cooked%20down%20with%20vodka,%20a%20splash%20of%20cream%20and%20some%20cheese.%20The%20easiest%20and%20tastiest%20pasta%20dish%20I%E2%80%99ve%20made%20in%20a%20long%20time.%20But%20I%20couldn%E2%80%99t%20leave%20it%20at%20that.%20I%20needed%20to%20go%20all%20out.%20To%20separate%20my%20boxed%20restaurant%20pasta%20meals%20from%20my%20home%20cooking,%20I%20needed%20something%20special.%20I%20picked%20up%20some%20fresh%20gnocchi%20(I%20wasn%E2%80%99t%20about%20to%20attempt%20homemade%20gnocchi%20as%20well),%20the%20cooked%20up%20some%20mushrooms%20with%20sage%20to%20top%20everything%20off.%20Like%20most%20meals%20I%20make,%20it%20was%20the%20perfect%20dinner%20with%20enough%20leftovers%20for%20lunch%20the%20next%20day.%3C/p%3E%3Cp%3EIn%20a%20large%20saucepan,%20heat%20olive%20oil%20over%20medium%20heat.%20Add%20garlic%20and%20shallots%20and%20cook%20until%20fragrant,%202-3%20minutes.%20Add%20tomato%20sauce%20and%20chopped%20tomatoes%20and%20bring%20to%20a%20boil.%20Stir%20in%20tomato%20paste%20and%20vodka,%20reduce%20heat%20and%20simmer%20until%20sauce%20has%20reduced%20by%20at%20least%201/3.%3C/p%3E%3Cp%3EMeanwhile,%20bring%20a%20large%20pot%20of%20salted%20water%20to%20a%20boil%20and%20cook%20gnocchi%20or%20pasta%20according%20to%20the%20box%E2%80%99s%20instructions.%20Melt%20butter%20in%20a%20saute%20pan%20over%20medium,%20low%20heat.%20Add%20mushrooms%20and%20cook%20until%20tender,%207-8%20minutes.%20Add%20vermouth,%201%20tablespoon%20heavy%20cream%20and%20sage.%20Mix%20well%20and%20continue%20cooking%20until%20almost%20all%20the%20liquid%20has%20evaporated.%20Remove%20from%20heat%20and%20keep%20warm.%3C/p%3E%3Cp%3EStir%20remaining%201%20cup%20of%20cream%20into%20sauce,%20cooking%20on%20low%20heat%20until%20sauce%20is%20uniformly%20warm.%20Remove%20from%20heat%20and%20stir%20in%20Parmesan%20cheese%20until%20melted.%3C/p%3E%3Cp%3ETo%20serve,%20divide%20pasta%20between%204%20plates.%20Top%20with%20about%201/2%20cup%20vodka%20sauce,%20a%20few%20spoonfuls%20of%20mushrooms%20and%20extra%20Parmesan%20cheese,%20if%20desired.%20Serve%20immediately.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
