This means having something that can be easily dished up at a moment’s notice like a slow cooker meal. I love the convenience of using my Crock-Pot since I can usually get a recipe going in the morning and have it ready by dinner time. However, this recipe for Gluten Free Slow Cooker Turkey Meatballs is easily made when you get home from school or work. Turkey meatballs just need a couple of hours to cook in the slow cooker, though you can let them go for up to four hours if you wish.

I used gluten free Kinnikinnick panko style bread crumbs in this Gluten Free Slow Cooker Turkey Meatballs. If you cannot find these online or at your favorite health food store, you can also use bread crumbs made from gluten free bread. Here’s how to make them yourself: Toast the bread until it’s quite dry. Then break the toast into pieces. Place the pieces into a food processor. Pulse until the bread is broken down into fine crumbs.

To easily measure out enough meat for 2-inch meatballs, I used a large ice cream scoop. This helped make the meatballs uniform in size.

Make a double batch and freeze half in freezer bags or plastic containers for another busy school night!

Serve these Gluten Free Slow Cooker Turkey Meatballs on your favorite gluten free pasta. There are so many varieties out there now. Even my grocery store has a store brand that’s so good my non-gluten free family doesn’t complain when I make them eat it.

Leftover meatballs make great sandwiches. Serve on your favorite gluten free bread with a slice of mozzarella cheese. Slice the meatballs so they fit in the sandwich better. You can preheat the meatballs in the microwave, if you wish, or serve them cold. Delicious both ways!

Gluten Free Slow Cooker Turkey Meatballs

Directions

Pour marinara sauce into slow cooker pot and set to low. Cover with lid.

Place remaining ingredients in a large bowl. Using your hands, mix ingredients together until well combined. Remove lid from slow cooker.

Using a large ice cream scoop, measure out enough meat for a 2-inch meatball. Shape meatball with your hands and place gently into the sauce. There will be enough for about 18 meatballs. Place each meatball in the crock so it’s covered with sauce. It’s OK if the meatballs are touching.

Cover and cook for 2 to 3 hours until they reach an internal temperature of 165 F. Serve on your favorite pasta.
