Denial is a lovely thing, but then you get to the day before you need to leave to go down to Wilmington and there isn’t much time left. You’ve haven’t even started packing and your husband is going to be home any minute, expecting you to cook him a delicious celebration supper.
Yes. Denial is a lovely thing but I can no longer live in it. I’m heading to Wilmington today for my first leg of the summer school marathon. I already have work assigned even before class has started! (Anyone want to help me read 35 pages in Spanish?)

%3C/p%3E%3Cp%3ELuckily%20I%20haven%E2%80%99t%20been%20in%20denial%20about%20everything%20involving%20this%20life%20change.%20In%20particular,%20I%20have%20given%20lots%20of%20thought%20to%20food!%3C/p%3E%3Cp%3EWith%20only%2015%20minutes%20in%20between%20my%20classes%20and%20a%20schedule%20that%20lasts%20from%208am%20to%203:30pm,%20I%E2%80%99m%20going%20to%20literally%20need%20food%20that%20I%20can%20shove%20in%20to%20my%20face%20while%20booking%20it%20to%20the%20next%20classroom.%20And%20it%E2%80%99s%20going%20to%20need%20to%20be%20GOOD%20FOOD%20that%20keeps%20my%20brain%20working%20and%20my%20tummy%20full!%3C/p%3E%3Cp%3EEnter:%20A%20Wrap!%3C/p%3E%3Cp%3ERudi%E2%80%99s%20gluten%20free%20Fiesta%20Tortillas%20stuffed%20with%20homemade%20veggie%20cream%20cheese%20and%20lean%20turkey!%3C/p%3E%3Cp%3EBut%20these%20wraps%20are%20not%20made%20with%20just%20corn,%20they%E2%80%99re%20loaded%20with%20whole%20grain%20flours%20like%20brown%20rice,%20amaranth,%20quinoa,%20and%20millet.%20And%20because%20of%20this%20awesome%20combination,%20these%20tortillas%20ARE%20NOT%20dry%20and%20brittle.%3C/p%3E%3Cp%3EThese%20tortillas%20are%20soft%20and%20malleable!%3C/p%3E%3Cp%3EI%20popped%20mine%20in%20the%20oven%20at%20400%20degrees%20for%20about%203%20minutes%20before%20making%20my%20wrap%20(I%20don%E2%80%99t%20have%20a%20microwave)%20and%20it%20worked%20perfectly!%3C/p%3E%3Cp%3EI%20seriously%20couldn%E2%80%99t%20be%20more%20excited%20about%20these%20wraps!%3C/p%3E%3Cp%3EEVERYTIME%20I%20go%20to%20the%20grocery%20store%20I%20give%20a%20quick%20scan%20to%20the%20section%20where%20the%20Flat%20Out%20wraps%20are,%20holding%20my%20breath%20and%20crossing%20my%20fingers%20that%20they%E2%80%99ll%20come%20out%20with%20a%20gluten%20free%20wrap.%3C/p%3E%3Cp%3EWish%20granted!%3C/p%3E%3Cp%3EFor%20the%20above%20wrap,%20I%20mixed%20~3%20tbsp.%20of%20minced%20cucumber%20with%20~3%20tbsp.%20diced%20cherry%20tomatoes%20with%201/4%20cup%20Neufchatel%20cream%20cheese.%20I%20spread%20this%20in%20the%20wrap%20and%20then%20added%20in%20a%20serving%20of%20lean%20turkey%20and%20wrapped%20it%20up!%3C/p%3E%3Cp%3EYUM.%3C/p%3E%3Cp%3EI%20foresee%20sprouts,%20spinach%20and%20pimento%20cheese%20getting%20wrapped%20up%20in%20these%20all%20summer!%3C/p%3E%3Cp%3EWhat%20about%20you?%20What%20would%20you%20wrap%20up%20in%20a%20tortilla?%3C/p%3E){kind=link}
