Quick and easy, made with ingredients you probably already have on hand. Who said gluten-free had to be not very tasty?
You can substitute a lot of ingredients - any nut butter (almond, cashew) has been said to work, and you can use sugar substitutes such as Splenda. Add a dash of vanilla extract and chocolate chips to spice it up!

- Preheat oven to 350°F.
- Cream the peanut butter and sugar together.
- Beat in the baking powder, then add the egg. Mix until well combined.
- As the cookies bake big, roll out small balls of dough - about a tablespoon is a good size. Press down on them with a fork to give them the characteristic marks.
- Bake for about 10 minutes, until the cookies are aromatic and soft, yet cohesive.
- Sprinkle sugar on top if you want, then let sit for five minutes. Transfer to a cooling rack for another five minutes.
