May is Celiac awareness month and in honor that Dare Foods has challenged the recipe reduxers to come up with some tasty gluten free recipes using their delicious gluten free cracker varieties; Breton Gluten Free original with Flax ad Breton Gluten Free Herb and Garlic. These crackers are perfect for a substitute for bread crumbs, they are crispy, flavorful and easy to crumble. I just love eggplant parmesan, but it is a lot of work, slicing the eggplant, breading it and then frying it. Bread crumbs won’t work for those that have gluten sensitivities, and I found that the Breton Gluten Free Herb and Garlic crackers added just the right flavor to the eggplant.

This recipe, Gluten Free Eggplant Parmesan skips a few steps and is much lighter than the traditional version, but not in taste. The key is to “fan” the slices of eggplant and not layer them in the baking pan so that the crumbs land on every single slice of eggplant. You will need a baking pan

that is at least 13 inches long.

INGREDIENTS

INSTRUCTIONS

Mix the oil and vinegar together, and brush each slice of eggplant with mixture on both side

Cover the baking pan with 3/4 to 1 cup of sauce

Spread out the slices of eggplant in a baking dish slightly overlapping them - do not layer them

Sprinkle the Breton Gluten Free Herb and Garlic crumbs over eggplant slices

Add 3 to 4 cups of your favorite sauce

Cover and bake at 350 for 30 minutes - remove from oven and cover

Sprinkle with cheese and return to oven and bake for another 15 minutes or until cheese melts
