%20to%20stay%20in%20their%20bun%20shapes%20with%20some%20success.%20You%20can%20check%20out%20more%20GF%20bun%20baking%20tips%20at%20this%20post%20from%20the%20Crispy%20Cook%20archives%20and%20then%20pretty%20much%20adapt%20any%20gluten-free%20bread%20recipe%20into%20GF%20buns.%3C/p%3E%3Cp%3EThe%20recipe%20we%20use%20over%20and%20over%20again%20for%20sandwiches%20and%20for%20toast%20is%20Elizabeth%20Barbone's%20Sandwich%20Bread%20recipe%20from%20her%20cookbook%20%22Easy%20Gluten-Free%20Baking%22.%20It%20makes%20a%20great%20basic%20white%20bread%20recipe%20that%20toasts%20beautifully%20and%20doesn't%20crumble%20easily.%3C/p%3E%3Cp%3EWith%20the%20encouragement%20of%20the%20Gluten%20Free%20Ratio%20Rally%20bakers,%20a%20group%20of%20gluten%20free%20food%20bloggers%20that%20tackles%20a%20different%20baking%20project%20each%20month%20and%20deconstructs/reconstructs%20them%20measuring%20ingredients%20by%20weight%20and%20recipes%20by%20ratios%20of%20flour/liquid/fat/egg,%20I%20was%20looking%20to%20make%20a%20different%20kind%20of%20sandwich%20bread%20to%20add%20variety%20to%20the%20freezer%20stash.%20This%20month's%20GF%20Ratio%20Rally%20Host,%20Karen%20of%20the%20Cooking%20Gluten-Free%20blog,%20picked%20BREAD%20as%20our%20baking%20challenge%20and%20initially%20I%20thought%20about%20trying%20to%20make%20a%20crusty,%20artisan-style%20loaf.%20I%20just%20ran%20out%20of%20time%20and%20schedule%20during%20this%20busy%20past%20month%20(note%20dearth%20of%20Crispy%20Cook%20posts)%20with%20various%20kid,%20business%20and%20garden%20activities%20on%20my%20plate,%20so%20I%20will%20hopefully%20be%20copying%20down%20someone%20else's%20recipe%20for%20such%20a%20gluten-free%20delight%20when%20Karen%20rounds%20up%20all%20the%20Ratio%20Rally%20posts%20on%20June%206th.%3C/p%3E%3Cp%3EFor%20my%20contribution%20to%20this%20bread%20rally,%20I%20wanted%20to%20use%20chickpea%20flour%20as%20my%20base%20flour.%20I%20find%20big%20bags%20of%20chickpea%20flour%20(labeled%20besan)%20at%20the%20Indian%20markets%20in%20Albany%20and%20they%20are%20economically%20priced.%20We%20use%20chickpea%20flour%20(and%20our%20other%20staple%20gluten%20free%20flour,%20brown%20rice%20flour)%20in%20lots%20of%20savory%20dishes%20to%20thicken%20sauces%20and%20curries,%20bread%20fish%20and%20veggies%20for%20pan%20drying%20and%20in%20one%20of%20our%20favorite%20meals,%20Bhajis%20with%20Rice.%20Chickpea%20flour%20also%20adds%20a%20nice%20bit%20of%20protein%20and%20fiber%20to%20our%20cooking,%20so%20that's%20a%20great%20bonus.%20My%20stab%20at%20converting%20a%20basic%20white%20bread%20recipe%20into%20a%20chickpea%20loaf%20was%20encouragingly%20successful.%20'%3C/p%3E%3Cp%3EHere's%20what%20I%20did:%3C/p%3E%3Cp%3EGrease%20a%209x5%20loaf%20pan%20and%20set%20aside.%3C/p%3E%3Cp%3EMix%20brown%20sugar,%204%20oz.%20warm%20water%20and%20yeast%20together%20and%20let%20stand%20in%20a%20warm,%20draft-free%20place%20to%20proof%20for%2015%20minutes.%3C/p%3E%3Cp%3EMeanwhile,%20mix%20dry%20ingredients%20together%20in%20a%20mixing%20bowl%20and%20whisk%20until%20completely%20blended.%20The%20flours%20are%20pretty%20fine,%20so%20keep%20the%20whisking%20motion%20low.%20And%20using%20a%20deep%20bowl%20helps%20keep%20the%20flour%20cloud%20down%20a%20bit.%3C/p%3E%3Cp%3EIn%20another%20bowl.%20blend%20eggs%20together%20with%20remaining%20water%20and%20oil.%20Add%20in%20yeast%20mixture%20and%20blend%20well.%20Add%20to%20dry%20ingredients%20and%20combine%20until%20blended%20and%20smooth.%20Scrape%20into%20greased%20loaf%20pan.%3C/p%3E%3Cp%3EHeat%20oven%20to%20170%20degrees%20F%20and%20then%20turn%20off.%20Place%20loaf%20pan%20inside%20a%20clean%20plastic%20bag%20(I%20use%20a%20shopping%20bag%20from%20grocery%20or%20store)%20and%20loosely%20tent%20it.%20Close%20oven%20door%20and%20let%20rise%20until%20mostly%20doubled,%20about%201%20hour.%3C/p%3E%3Cp%3ETake%20loaf%20pan%20out,%20turn%20oven%20back%20on%20to%20375%20degrees%20F%20and%20remove%20plastic%20bag.%20Bake%2030-35%20minutes,%20or%20until%20top%20is%20nicely%20golden-brown.%20Let%20cool%20in%20pan%20for%20several%20minutes,%20then%20carefully%20tap%20it%20out%20onto%20a%20cooling%20rack%20and%20let%20finish%20cooling.%3C/p%3E%3Cp%3EWhen%20completely%20cool,%20slice,%20wrap%20and%20stick%20it%20in%20the%20freezer%20to%20use%20as%20necessary.%3C/p%3E%3Cp%3EMakes%20one%20loaf.%3C/p%3E%3Cp%3ELooking%20forward%20to%20seeing%20what%20the%20other%20creative%20and%20talented%20GF%20Ratio%20Rally%20bakers%20will%20be%20pulling%20out%20of%20their%20ovens%20tomorrow!%20Be%20sure%20to%20check%20over%20at%20Karen's%20blog%20to%20see%20links%20to%20all%20the%20other%20blogger's%20bread%20recipes.%20And%20come%20back%20next%20month%20to%20see%20some%20gluten-free%20cracker%20and%20breadstick%20recipes%20when%20it's%20my%20turn%20to%20host%20the%20GF%20Ratio%20Rally.%3C/p%3E){kind=link}
