I received the package right before I was to take a trip back home and visit my son and daughter-in-law so I wasn't able to do anything with it until I came home from my visit. One of the items I received was a large piece of ginger root. On second thought, I should have taken at least half of that home to my Dad and Mom. Dad eats ginger on a daily basis (although usually candied ginger).

This morning I decided I was going to make some gingerbread waffles to help give the house a real warming feel in temps that feel like -3. Something about the smell of ginger, cinnamon, nutmeg, gives a warming feel! I used fresh grated ginger from the ginger root I received from Freida's. You don't need a lot to give it that gingery taste when it is freshly grated! I used a recipe I found on Food Network by Rachel Ray that I adapted to fit what I wanted to do this morning. I hope you will try these out, maybe on Thanksgiving morning or Christmas Morning...or even a cold blustery one like today in Upstate New York! Waffles are a sure way to keep everyone full until that big meal!

Ingredients:

Directions:

In a large bowl combine flour through nutmeg. In a large glass measuring cup (I use a 4 cup measure), whisk eggs, ginger, pumpkin puree, brown sugar, and molasses.

Pour wet ingredients into dry and then pour melted butter over top. Stir until just combined.

Ladle about 1/3 cup of batter onto hot waffle griddle sprayed with cooking spray. Lower lid and let cook until browned.

Serve with butter, warm maple syrup or as I did, with some Trader Joe's Apple Cranberry Butter!
