Today is the last day of Christmas Week I hope you enjoyed the full week of Christmas treats as well as great giveaways. To end the week I am going out with a bang! I made gingerbread men cookies. This is the first time I have ever made gingerbread men. They weren’t something that my mom ever made as a kid, so I never tried to make them before. This year though, my 8 year old put in a request.

My husband said his mom made gingerbread men cookies a few times when he was younger, so I asked her for her recipe. She got the recipe from a free cookbook the electric company gave out in 1958. So you could say the recipe has been around a few years. I did up the spices a little bit, to give it that full on gingerbread flavor. Aside from that, I kept it the same. These gingerbread men are easy to make thick and chewy or thin and crispy. I like cookies thick and chewy, so I rolled the dough out rather thick, and baked for 10 minutes. If you want the crispier you can roll thinner or bake for a little longer.

I almost have a panic attack when I walk into Hobby Lobby or Michael’s Craft Store. I am not crafty, and very easily over whelmed with stuff like that. So decorating these cookies made me nervous! I had visions of cute little bows and different colors. The bows came out a big mess, and then I couldn’t figure out how to add color and have it still look good. In the end, I think they turned out rather cute. Santa will definitely enjoy a couple of these left out for him on Christmas Eve.

Gingerbread Men Cookies

Serves: 3 dozen

Prep time: 15 mins

Cook time: 10 mins

Total time: 25 mins

Spicy gingerbread cookies. Perfectly festive for the holidays.

Ingredients

Instructions

In the bowl for an electric mixer pour water over the softened butter. Add brown sugar and molasses, mix well.

In a separate bowl whisk together 3 cups flour, baking soda, salt, ginger, nutmeg, cloves, and cinnamon. Add to molasses mixture, blend well. Add more flour if the dough is really stick.

Cover and chill for 2 hours.

Preheat oven to 375 degrees

Roll dough onto a lightly floured surface about ⅛ to ¼ inch thick. Cut into “men”.

Bake for 10 minutes. If you want crispy cookies, you can bake a little longer. Remove from oven, and allow to cool.

Frost if desired.
