- For the “Have a GRAIN Holiday” Recipe Contest, Hodgson
- Mill’s is asking entrants to create a sweet or savory seasonal baked good using
- Hodgson Mill Whole Wheat Flour. The ideas are endless!
- So what do you think you will be baking?
- Here at Colie’s Kitchen we decided to make whole wheat Gingerbread
- cookies. Not only are they a little healthier because we added whole wheat
- flour, but they are absolutely delicious too! I like to call that a win-win
- dessert!
- In the spirit of the holidays and to celebrate their “Have a
- GRAIN Holiday” Recipe Contest Hodgson Mill’s has generously
- offered to give one of Colie’s Kitchen’s lucky readers a great selection of
- assorted Hodgson
- Mill products – a $25 value the winner will have a choice of
- gluten free products or a selection of Whole Wheat items! (U.S. entrants only)
- Ingredients:
- 3
- 1/2 cups Hodgson Mill Whole
- Wheat Flour
- 3
- teaspoons baking powder
- 1
- cup (2 sticks) butter, softened Recipes
- 1/2
- cup sugar
- 1/2
- cup light brown sugar
- 2
- large eggs
- 2/3
- cup molasses
- 2
- teaspoon vanilla extract
- 1/2
- cup (1 stick) unsalted butter, softened
- 1
- 1/2 teaspoons ground ginger
- 1
- 1/2 teaspoon ground cinnamon
- 1/2
- teaspoon salt
- 1/4
- teaspoon ground cloves
- 1/4
- teaspoon ground nutmeg
1.
In a large bowl, mix flour, baking powder, ginger, cinnamon,
salt, cloves and nutmeg.

Using a stand mixing bowl add cream butter and sugars.

Add eggs one at a time then next add molasses and vanilla.

Gradually add the dry ingredients until well combined. Try not
to over mix

You may have to use a spatula to insure you get all the
ingredients off the bottom of the bowl. The ingredients get thick quick.
6.
Preheat oven to 350 degrees. Spray baking sheets with cooking
spray

Roll dough into 1 ounce balls, and flatten with your hand. These
cookies do not spread much. Place on baking sheet 1 inches apart.
8.
Bake for 10 minutes until the cookies are done.
