- Even though this is a japanese relish I keep it on hand to serve with Westernstyle roast lamb and grilled chicken.
- Method
- Peel the ginger and cut it crossways into very thin slices.
- Stacking a few slices at a time together cut them into very fine julienne strips.
- Combine the vinegar sugar and salt in a bowl and mix well till the sugar is dissolved. Put in the ginger and stir.
- Set aside for at least 10-15 min.
- Lift the ginger shreds out of the liquid before serving.
- Serves 4
