- Cream butter and sugar till thick and pale. Gradually add in the beaten egg. Continue to beat till thick.
- Combine lowfat milk, treacle, bicarbonate of soda, and lemon essence.
- Add in to the butter mix. Sift in flour, ginger and cream of tartar. Mix to lightly to create a smooth dough. Roll into walnut sized balls.
- Arrange proportionately spaced on a lightly greased baking tray. Bake 350 F 20 min.
