1/2 c. rice wine vinegar
1 Tbsp. water
1 Tbsp. peeled and grated fresh ginger

3 Tbsp. mirin (see Note) Healthy pinch of salt
2 Tbsp. minced scallions

Mix all ingredients together in a small bowl.
Note: You can substitute 3 Tbsp. dry sherry with 2 Tbsp. sugar for mirin.
