  • 1 pkg. (18 1/4 oz.) spice cake mix
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon baking soda
  • 1/4 cup water
  • 1/4 cup molasses
  • 6 teaspoons vanilla

  1. In a large bowl, combine the cake mix, ginger, and baking soda
  2. Stir in the water, molasses, and the vanilla
  3. Mix well
  4. Roll into 10 balls
  5. Place 3 inches apart onto greased baking sheets
  6. Flatten slightly with a glass coated with cooking spray
  7. Bake at 375 F for 13-15 minutes or until the surface cracks and the cookies are firm
  8. Remove to wire racks to cool.
