- Heat butter in a heavy saucepan. Add in the onions, shallots, garlic, Shiitake stems, white mushrooms, and saute/fry for about one hour. Add in the brandy and let boil for 30 seconds then add in 1/2 the water and bring to a simmer.
- Add in the heavy cream slowly, stirring it in. The total temperature shouldn't be reduced much. Simmer for about 20 min, adjust consistency.
- Strain, season, and add in Shiitake mushrooms. Season again and serve.
