Crispy Garlic Parsnips and Carrot Fries are oven baked and make a great healthful side dish .

Garlic Parsnip and Carrot Fries Author: Marlene Baird Prep time: 15 mins Cook time: 30 mins Total time: 45 mins

2 carrots, peeled, cut into strips 2 parsnips, peeled, cut into strips 3 or 4 cloves of garlic, minced 1½ Tablespoons olive oil coarse sea salt flat-leaf parsley, chopped

Heat ½ of garlic and ½ Tablespoon of oil in a small pan over medium heat for 2 minutes. Set aside. Preheat oven to 450°F. Mix parsnips, carrots, ½ garlic, and rest of the oil on a large rimmed baking sheet. Season with salt and toss to coat. Spread out in a single layer. Roast for 10 minutes; turn parsnips and carrots and roast until tender and browned in spots, 10–15 minutes longer. Remove from the tray with a metal spatula. Toss with parsley, reserved garlic, and additional salt, to taste. Serve immediately. 3.2.2310

I have only once before and I remember that I loved the flavor.

It’s such a neglected root vegetable, isn’t it?. Well she’s not that pretty. But when I fixed her up with carrots and garlic, it was a beautiful melange.

The hubby and I had a conversation about carrots recently.

Don’t tell him I told you this either.

I love that he wants to make dinner for me. I really do. And he does make a mean steak.

But he made me some carrots. He served them in a bowl and there was some sort of liquid in the bowl. The carrots were, um, well, they were mushy tasting. I asked him what was in there.

He told me he boiled the carrots in water and vanilla extract. So, I basically told him that because my mom would make her carrots super soft, my sister and I just didn’t like to eat them that way. He was sad that I didn’t finish my carrots.

I can tell you that my garlic parsnips and carrots were gobbled up by everyone. Apparently I made the mistake of not making enough.

Oh well, maybe next time there will be enough for seconds.
