The original recipe was for 8 servings but I scaled it down for the two of us. The original recipe used regular bread crumbs and cheddar cheese.

- Preheat oven to 350 degrees F (175 degrees C).
- Melt the butter in a saucepan over low heat, and cook the garlic until tender, about 5 minutes.
- In a shallow bowl, mix together the Parmesan cheese, shredded Colby-Jack cheese, italian bread crumbs (or plain), parsley, oregano, salt and pepper.
- Dip each chicken breast in the melted garlic butter to coat, then press into the bread crumb & cheese mixture. Arrange the coated chicken breasts in a 13x9-inch baking dish. Drizzle with remaining butter and top with any remaining bread crumbs.
- Bake about 30 minutes or until the chicken is no longer pink and juices run clear.
