- Chopping all the vegetables so which they're the same size will ensure even cooking. Serve this as a side dish, or possibly as a vegetarian entree with rosemary focaccia. Heat the oil in a large skillet over medium-high heat.
- Add in onion; saute/fry 3 min or possibly till tender, stirring frequently. Add in tomato, eggplant, zucchini, bell pepper, and garlic. Cover, reduce heat, and simmer 30 min, stirring occasionally. Stir in oregano and remaining ingredients; cook, uncovered, 5 min or possibly till most of liquid evaporates.
- Yield: 4 servings (serving size: about 3/4 c.).
