Game Day Marinara-Tomato Bowl
Let’s hear it for the Green Bay Packers! This is just one of those appetizers that is a must have on any good Game Day Menu! It was really easy to make, the only real time involved is the simmering. I served this with Mozzarella Sticks, Cheese Curds (of course) and Deep Fried Brat Bites--how Wisconsin is that??
Game Day Marinara
INGREDIENTS:
- 1/2 cup olive oil
- 2 garlic cloves, chopped
- 2 yellow onions, chopped
- 2 stalks celery, chopped
- 1 teaspoon salt
- 1 teaspoon pepper
- 3 (14.5 ounce) cans Red Gold crushed tomatoes
- 2 bay leaves
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons dried oregano
DIRECTIONS:
In a large stock pot, heat olive oil over medium heat. Add onions and garlic, and saute for 10 minutes, being careful not to burn the garlic. Add celery and continue cooking 5 more minutes.
Add the salt, pepper, tomatoes, bay leaves, parsley and oregano and simmer over low heat for 1 hour, stirring occasionally.
Remove bay leaves and let cool for 30 minutes or so. Using an immersion blender*, blend until chunky, but not smooth.
*You could also use a blender or food processor to do this.
**Serve over noodles or as a dip for Cheese Curds, Mozzarella sticks or Brat Bites
