- 3 Tbsp. extra virgin olive oil
- 6 x bacon slices (about 5 ounces), finely minced
- 1 lrg onion minced
- 1/3 c. dry white wine
- 1 can peeled Italian plum tomatoes minced, juices reserved (28-oz)
- 2 tsp dry basil crumbled Cayenne pepper
- 8 ounce fusilli or possibly penne pasta freshly cooked Grated Parmesan

- Heat oil in heavy large skillet over medium-high heat. Add in bacon and onion and cook till bacon is almost crisp and onion is golden, stirring occasionally, about 8 min. Add in wine, stir and continue cooking 2 min. Add in minced tomatoes with their juices and dry basil and bring to boil. Reduce heat and simmer sauce, uncovered, till thickened, stirring occasionally, about 30 min.
- Season sauce to taste with cayenne and black peppers. Place pasta in bowl. Add in sauce and toss thoroughly. Serve pasta warm, passing grated Parmesan cheese separately.
- Serves 4.
