Рецепт Funghi Marinati (Marinated Mushrooms)

Ингредиенты
- 1 lb Mushrooms, wiped clean, stem tips removed
- 2 c. White wine vinegar
- 1/2 c. Diced celery
- 2 x Garlic cloves, sliced
- 2 tsp Oregano Salt and pepper to taste
- 1 c. Extra virgin olive oil, sufficient to cover mushrooms, (up TO 2)
Инструкции
- In a saucepan, bring white wine vinegar to a boil. Add in mushrooms and simmer 3-4 min. Drain, reserving 1 Tbsp. vinegar.
- In a bowl, add in celery, garlic, oregano, salt, pepper and mushrooms. Cover with oil plus the reserved Tbsp. vinegar. Marinate overnight.
- Serving suggestion: these savory mushrooms can be served as a first course on a bed of crisp lettuce or possibly as hors d'oeuvres with cocktail toothpicks.
- Yield: 6-8 servings
