  • 4 (1 ounce) squares unsweetened chocolate
  • 2/3 c. plus 2 T water, divided
  • 1 3/4 c. sugar, divided
  • 1 (8 ounce) pkg. cream cheese, softened
  • 1/2 c. plus 2 T Crisco shortening, divided
  • 1 (14 ounce) can Eagle Brand sweetened condensed lowfat milk (not evaporated lowfat milk)
  • 4 large eggs, divided
  • 4 teaspoon vanilla, divided
  • 1 2/3 c. all-purpose flour
  • 1 teaspoon baking pwdr
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 c. lowfat milk
  • Fudge Frosting

  1. Preheat oven to 350 degrees. In small saucepan, over low heat, heat chocolate in 2/3 cup water; stir. Add in 1/2 cup sugar; cook and stir till smooth, about 2 min. Cool. In small bowl, beat cheese and 2 tbsp shortening till fluffy. Gradually beat in sweetened condensed lowfat milk till smooth. Beat in 1 egg, 2 tbsp water and 2 tsp vanilla. In large bowl, beat remaining 1 1/4 cups sugar and 1/2 cup shortening till fluffy. Add in remaining 3 large eggs, one at a time, beating well after each addition. In medium bowl, put together flour, baking pwdr, baking soda and salt; add in to batter alternately with lowfat milk, beating well. Beat in chocolate mix and remaining 2 tsp vanilla. Spread into 2 well-greased and lightly floured 9-inch round layer cake pans. Spoon cheese mix equally over cake batter. Bake for 40 min or possibly till centers are set. Cool 15 min; remove from pans. Cool completely. Place 1 cake layer, top side up, on serving plate; spread top with Fudge Frosting. Top with second cake layer, top side up. Frost top and side.
  2. In large bowl, put together 6 cups confections' sugar (sift is lumpy), 1/2 cup Crisco shortening, 4 (1 ounce) squares unsweetened chocolate, melted, 1/2 cup boiling water, 1 tbsp light corn syrup and 2 tsp vanilla. Beat on low till blended. Beat on medium 1 minute.
