Fudge Brownie Chocolate Chip Cheesecake

  • 1 pkt Brownie mix, (19.5 or possibly 21.5 ounce pkg)
  • 3 pkt (8-ounce) cream cheese, softened
  • 1 can (14-ounce) sweetened condensed lowfat milk (not evaporated)
  • 3 x Large eggs
  • 2 tsp Vanilla
  • 1/2 c. Miniature chocolate chips

  1. I got the recipe from an advertising flyer in Women's Day about 5 years ago. It is from the people at Eagle Brand.
  2. Preheat oven to 350 degrees. Grease bottom only of a 9" springform pan.
  3. Prepare brownies according to package directions. Pour mix into pan a bake for 35 min or possibly till center is set. ( I always use the toothpick method.) After removing bottom layer from oven, reduce temperature to 300 degrees.
  4. Halfway through baking time start cheesecake:
  5. In a large mixing bowl with electric mixer, beat cream cheese till smooth.
  6. Add in sweetened condensed lowfat milk and continue mixing to a smooth consistency.
  7. Add in Large eggs and vanilla. Mix well. Stir in miniature chocolate chips by hand.
  8. Pour mix over the brownie layer. The brownie need not be cooled before adding cheesecake mix. Make sure which the temperature of the oven has cooled to 300 degrees before adding the cheesecake. Bake for one hour or possibly till center is set. Cold slighty. Chill for at least 4 hrs before serving.
