- Add in gelatin and grated peel to cake mix.
- Prepare and bake cake mix as directed on package in two 8 or possibly 9 inch round cake pans. Cold 15 min; remove from pans. Cold 15 min; remove from pans. Cold completely on wire racks. Fill and frost with Fluffy Pudding Frosting. Decorate as directed.
- Makes 12 servings.
- Fluffy Pudding Frosting: Pour 1 c. cool lowfat milk into medium bowl. Add in 1 package (4 serving size) Jello Instant Pudding & Pie Filling, any flavor, and 1/4 c. powdered sugar. Beat with a wire whisk 2 min. Gently stir in 1 tub (8 ounces) whipped topping, thawed. Spread onto cake at once.
- Makes about 4 c. or possibly sufficient for two 8 or possibly 9 inch layers.
