Рецепт Fruit Salad with Cool Mint Dressing
This is a delicious and refreshing way to enjoy summer fruit. Refreshing on a warm, late summer evening, sitting on the patio, enjoying the last few nights of summer~ The Cool Mint Dressing needs to be made ahead, at least 8 hours but will keep in the refrigerator for 1 week.
- Cool Mint Dressing:
- 1/3 cup red wine vinegar
- 1/4 cup honey or firmly packed light brown sugar
- 1/4 cup olive oil or vegetable oil
- 8 springs fresh mint leaves, torn
- 1 t lime juice or key lime juice
- 1 t poppy seeds
- In a jar with a tight fitting lid, combine the vinegar, honey or brown sugar, oil, mint, lime juice and poppy seeds. Cover tightly and shake well, then refrigerate at least 8 hours. Discard mint leaves and shake the dressing well. Will keep for 1 week in the refrigerator.
- Fruit Salad:
- 2 medium firm bananas
- 2 cups fresh blueberries
- 2 cups sliced fresh strawberries
- 1-2 T fresh mint leaves, torn, for garnish
- Whipped Cream, optional
- Note: You can add raspberries and blackberries if desired
In a large bowl, combine the bananas, and berries. Pour the cool mint dressing, over the fruit salad. Garnish with fresh torn mint leaves and serve with whipped cream. Enjoy!
