This recipe can be made with any type of fruit you can think of. It can double as a dessert or a snack for kids and adults of any age!

For those who are not aware, I am a part time culinary instructor for a children's cooking program here in town. Coming across new recipes to make with these little chefs are one of my favorite things (among others) that I enjoy about this job.
I first learned about this recipe during preparation for the first class I ever taught. All of the kids I have come across absolutely adore this recipe! Grown-ups too! Since discovering it, I have made it twice at home for my own children and three times for the children in my classes.
What's really cool about this recipe is how versatile it is. You can use any type of fruit you want. Have some bananas? Slice them up and throw em' on there. Have some grapes? Cut them in half and throw em' on there. Are your peaches way to ripe? Cut em up and place them on there! The sky is the limit.
First, you are going to take a 12-inch pizza pan and line it with parchment paper to fit (I measured mine by tracing an outline of the pan and then cutting it). Take over half of your sugar cookie dough and mold it to fit the pan. This will be your crust.
Note: The cookie dough may be a little sticky. You may need to sprinkle the top with a little bit of all purpose flour to ease things along.
Next, bake your dough in a preheated, 375 degree oven. Bake for 12 minutes or until light brown. Let the crust cool, then flip it over on a workable surface.
Mine cracked when I flipped it over. But that's ok. I will not apologize for this crack nor will I make excuses, like Julia Child once said :)
In a medium bowl, combine the cream cheese, 1/3 cup of sugar, and 1/2 teaspoons of almond extract (or whatever extract of your choice). Spread the cream cheese mixture over the cooled cookie crust. Next, take your chopped fruit and place it over the cream cheese.
The kids really can get creative during this part of the recipe. I have seen some awesome creations!
Lastly, in a small mixing bowl, combine 1/2 cup of apricot or peach preserves with 1 tablespoon of water. Microwave on high for about 30 seconds. Stir until well combined and brush the mixture over the fruit to prevent browning.
Refrigerate the pizza until ready to serve.
(makes one 12-inch pizza)
Ingredients:
- 1 (16.5 oz.) package of refrigerated cookie dough
- 1 (8 oz.) package of cream cheese at room temperature
- 1/3 cup of sugar
- 1/2 teaspoon of vanilla extract or other flavoring (almond, lemon, orange, etc…)
- Fresh blueberries, sliced kiwi, and sliced strawberries (or any other fresh fruit you can think of)
- 1/2 cup of apricot/peach preserves
- 1 tablespoon of water
- All purpose flour to help with the cookie dough
Directions:
1. Preheat the oven to 375 degrees.
2. Line a 12 inch pizza pan with fitted parchment paper.
3. Take a little bit over half of your cookie dough and place it on top of the parchment paper.
4. Shape and mold the cookie dough to form a crust (sprinkle some all purpose flour on top of the dough to prevent stickiness).
5. Bake crust in the oven for 12 minutes or until light brown.
6. Let crust cool for at least 15 to 20 minutes.
7. While crust is cooling, mix the cream cheese, sugar, and vanilla extract in a small bowl.
8. Spread the cream cheese mixture on top of the cooled crust.
9. Place fresh fruit on top of the cream cheese.
10. In another small bowl, mix 1/2 cup of apricot/peach preserves with 1 tablespoon of water.
11. Microwave preserves on high for around 30 seconds. Stir until well combined.
12. Brush preserves onto the fruit to prevent browning.
13. Refrigerate pizza until ready to serve.
