%3C/p%3E%3Cp%3EHere's%20Wishing%20everyone%20a%20very%20Happy,%20healthy%20&%20prosperous%20New%20Year%202014.%3C/p%3E%3Cp%3EOur%20blogging%20marathon%20group%20is%20back%20again%20in%20the%20new%20year%20with%20BM%23%2036.%20To%20start%20the%20new%20year%20on%20a%20sweet%20note,%20I'm%20making%20some%20cookies%20for%20the%20first%20week%20of%20the%20marathon.%20I%20wanted%20to%20post%20a%20savory%20cookie%20too,%20but%20posted%20this%20baked%20mathri%20last%20week/%20year%20itself.%3C/p%3E%3Cp%3EI%20made%203%20types%20of%20cookies%20and%20this%20eggless%20fruit%20cake%20to%20give%20as%20edible%20gifts%20this%20Christmas%20season.%20Last%20few%20years%20the%20cookies%20I%20made%20for%20Christmas%20had%20eggs%20in%20them%20and%20it%20didn't%20bother%20me.%20But%20this%20year%20I%20was%20baking%20for%20family%20who%20don't%20eat%20eggs%20and%20I%20had%20to%20find%20eggless%20cookie%20recipes%20or%20at%20least%20recipes%20that%20had%20only%201~2%20eggs,%20so%20I%20can%20easily%20replace%20them%20egg%20replacer.%3C/p%3E%3Cp%3ESo%20for%20the%20first%20day,%20I%20have%20these%20Fruit%20&%20Nut%20cookies%20that%20are%20basically%20shortbread%20cookies%20with%20some%20dry%20fruit%20and%20nuts%20added.%20I%20already%20have%20these%20fruit%20&%20nut%20cookies%20and%20these%20pistachio%20sandwich%20cookies%20that%20are%20made%20almost%20the%20similar%20way.%3C/p%3E%3Cp%3EWhat's%20great%20about%20these%20cookies%20is%20that%20once%20you%20make%20the%20dough%20and%20freeze%20it,%20then%20you%20can%20cookies%20at%20moments%20notice.%20Also%20the%20dough%20comes%20together%20in%20no%20time%20and%20is%20very%20easy%20to%20work%20with.%20Just%20make%20sure%20to%20leave%20the%20butter%20out%20for%20couple%20of%20hours%20to%20get%20it%20nice%20and%20soft.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EBeat%20sugar,%20butter,%20salt%20and%20vanilla%20in%20a%20stand%20mixer%20(using%20the%20paddle%20attachment)%20or%20using%20a%20hand%20mixer%20until%20light%20and%20fluffy.%3C/p%3E%3Cp%3EAdd%20flour,%20pistachios%20and%20cranberries,%20stir%20until%20combined%3C/p%3E%3Cp%3EDivide%20the%20dough%20in%20half%20and%20shape%20into%20a%20log;%20square,%20triangle%20or%20round.%3C/p%3E%3Cp%3ERoll%20the%20log%20in%20plastic%20wrap%20and%20then%20in%20foil,%20freeze%20for%20at%20least%201%20hour%20or%20up%20to%203%20months.%3C/p%3E%3Cp%3EWhen%20ready%20to%20bake,%20preheat%20the%20oven%20to%20300%C2%B0F.%20Lightly%20grease%202%20baking%20pans%20or%20line%20them%20with%20parchment%20paper.%3C/p%3E%3Cp%3ERemove%20the%20cookie%20logs%20from%20the%20freezer%20and%20set%20them%20aside%20for%20a%20few%20minutes%20to%20soften%20a%20little%20bit.%20Then%20slice%20them%20into%20%C2%BC%22%20thick%20pieces.%3C/p%3E%3Cp%3EPlace%20them%20on%20the%20prepared%20baking%20sheet%20and%20bake%20for%2025~35%20minutes%20or%20until%20they%20feel%20firm.%20They%20will%20not%20brown%20much,%20baking%20longer%20at%20a%20lower%20temperature%20prevent%20them%20from%20darkening.%3C/p%3E%3Cp%3ERemove%20the%20cookies%20from%20the%20oven%20and%20place%20them%20a%20cooling%20rack%20to%20cool%20completely.%20Store%20them%20in%20an%20airtight%20container.%3C/p%3E){kind=link}
