  • 1 Tbsp. orange rind grated

  • 4 x Large eggs
  • 3 c. all-purpose flour
  • 1/2 c. cornstarch
  • 1 tsp salt
  • 1 c. nonfat lowfat sour cream
  • 1 c. mixed dry fruit coarsely minced dry cranberries dry cherries dry blueberries CITRUS GLAZE
  • 1 c. powdered sugar orange juice

  1. Citrus Glaze: Combine sugar and sufficient orange juice to make a glaze consistency.

  3. Cake: Beat sugars, cream cheese, citrus rinds, and vanilla till smooth in large bowl; beat in Large eggs. Fold in combined flour, cornstarch, baking soda, and salt alternately lowfat sour cream. Fold in fruit.
  4. Pour batter into greased 12 c. fluted tube pan. Bake at 350 till toothpick inserted in center comes out clean, about 60 min. Cold in pan on rack 10 min; remove from pan and cold. Drizzle with glaze.
