,%20I%20promised%20to%20bake%20a%20fruit%20cake%20and%20post%20my%20recipe.%20I%20know%20you%20must%20be%20thinking%20what%20kind%20of%20girl%20I%20am,%20made%20Key%20Lime%20Pie%20for%20Christmas%20and%20Fruit%20Cake%20for%20New%20Year?%20Well..%20I%20will%20say...I%20am%20different%20:)%3C/p%3E%3Cp%3EI%20remember%20we%20used%20to%20love%20the%20Fruit%20Cake%20we%20used%20to%20get%20in%20India.%20It%20had%20lots%20of%20dried%20cherries%20and%20nuts.%20Lovely%20buttery%20taste%20with%20fruits,%20nuts%20and%20just%20the%20perfect%20amount%20of%20sweetness.%20Today%20I%20revived%20that%20taste%20and%20my%20husband%20loved%20the%20cake.%3C/p%3E%3Cp%3EIn%20the%20traditional%20fruit%20cake,%20usually%20the%20fruits%20and%20nuts%20are%20soaked%20in%20rum%20for%20a%20couple%20of%20days%20atleast%20but%20I%20didn't%20want%20to%20use%20the%20alcohol.%20What%20I%20did%20was%20cooked%20the%20dried%20fruit%20and%20nuts%20in%201/4%20cup%20of%20orange%20juice%20and%202%20tsp%20of%20rum%20extract%20till%20the%20nuts%20and%20cherries%20soaked%20up%20all%20the%20liquid.%20It%20worked%20perfectly%20well%20and%20the%20cake%20tastes%20just%20as%20awesome.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3E1.%20In%20a%20pan,%20add%20orange%20juice,%20rum%20extract,%20cherries,%20raisins%20and%20walnuts.%20Cook%20on%20medium%20heat%20while%20stirring%20until%20all%20the%20liquid%20is%20soaked%20up.%20Switch%20off%20the%20gas%20and%20let%20this%20mixture%20cool%20down.%3C/p%3E%3Cp%3E2.%20In%20a%20small%20bowl,%20sift%20together%20the%20all%20purpose%20flour,%20baking%20powder%20and%20salt.%20Keep%20aside.%3C/p%3E%3Cp%3E3.%20In%20the%20bowl%20of%20your%20stand%20mixer,%20cream%20the%20butter%20and%20sugar%20together%20at%20medium%20speed.%3C/p%3E%3Cp%3E4.%20Add%20eggs%20one%20at%20a%20time,%20mixing%20in%20between.%20Stir%20in%20the%20vanilla%20and%20orange%20essence.%3C/p%3E%3Cp%3E5.%20Now%20hold%20on%20to%202%20tbsp%20of%20flour%20mixture%20and%20spoon%20the%20rest%20of%20the%20flour%20mixture%20into%20the%20liquid%20one%20and%20stir%20it%20enough%20to%20combine.%3C/p%3E%3Cp%3E6.%20Sprinkle%20the%202%20tbsp%20of%20flour%20mixture%20on%20the%20prepared%20fruit%20nut%20mixture%20and%20toss%20it%20well.%20This%20method%20will%20not%20let%20the%20fruits%20n%20nuts%20sink%20to%20the%20bottom%20while%20baking.%3C/p%3E%3Cp%3E7.%20Add%20the%20nut%20mixture%20to%20the%20prepared%20batter%20and%20mix%20using%20a%20spatula.%3C/p%3E%3Cp%3E8.%20Grease%20a%209x5%20inch%20loaf%20pan%20and%20pour%20the%20mixture%20into%20the%20pan.%3C/p%3E%3Cp%3E9.%20Bake%20in%20350%20degree%20F%20pre-heated%20oven%20for%20about%2040-45%20min%20or%20until%20the%20toothpick%20inserted%20in%20the%20center%20comes%20out%20clean.%3C/p%3E%3Cp%3E10.%20Let%20cake%20cool%20for%2015-20%20minutes%20before%20removing%20from%20the%20pan%20and%20let%20it%20cool%20completely%20before%20slicing.%3C/p%3E%3Cp%3EEnjoy%20the%20delicious%20Fruit%20Cake%20and%20Have%20a%20wonderful%20New%20Year!%3C/p%3E){kind=link}
